Short ribs consist of the meat covering the first 5 rib bones. Despite its name, Beef Short Ribs are not a part of the "rib" section. Short ribs are actually a part of the chuck, and like the rest of the chuck,  the muscles are used more heavily making them less tender but full of flavor and perfect for braising.
